Obituary

George Ellis West Jones, 57, of Brunswick, passed away at Southeast Georgia Health

System on August 29, 2023.

George was born on June 20, 1966 in Atlanta, Georgia but raised here in Brunswick most of

his life. George was the only boy in a family of 4 sisters, so naturally he quickly became a

protector and someone you could always depend on.

George Ellis Jones graduated from Bunn High School in Bunn, North Carolina. He was a

part of the symphonic band and also participated in the marching band during high school

as a trumpeter. Ellis was a phenomenal Trumpet Player all of his life which led him to attend

college in North Carolina to further his passion for music. One of his finest musical

moments was having the opportunity to play with the famous "Tonight Show" orchestra

Trumpeter, Doc Severson. His favorite musician was always Frank Sinatra and his specialty

was karaoking "Fly me to the moon" and reenacting his ballroom dancing.

Next to music, George had a passion for fishing. You could find him on a pier anytime with

a pole in his hand, making new friends anywhere he went. George never met a stranger,

and would give the shirt off of his back to anyone in need.

George's third well-known passion was handyman services. There was nothing that he

wouldn't or couldn't fix from electrical, automotive, plumbing to boating. George was the

"go-to" guy when you just needed a hand, he'd always show up without question and with a

smile.

He spent most of his career in the hospitality industry as a master mixologist, all areas of

Front of House Operations, a Butler, and Management. He was a very familiar face locally,

having been employed in most major businesses in Glynn County to include the prestigious

5-star Sea Island for an accumulated and combined 15 years, King and Prince Resort for an

accumulated and combined decade, Hampton Golf Club, Bistro 1188, Purple Sage Catering

and many known businesses on Jekyll Island and Saint Simons Island. In the early 2000s,

He opened his own Bistro on Saint Simons Island, Hideawhile Bistro, which he renovated

with his bare hands, and operated nearly single handedly. When he wasn't working around

town in restaurants he ran his side gigs of private chef'n for his private clientele. His

specialty was his secret family recipe "crab toast" which was his mothers recipe; to date, a

recipe so secret he only shared it with his daughter

Preceded in death were his parents; George David and Mary Ellis West Jones, one sister

Mary Katherine Lupo.

George is survived by his wife; Kathy Rumfelt Jones of 18 years;

daughter, Ashley Girtman, grandchildren, Blake Aspinwall and Hadleigh German;

sons, David Ian West Jones (Ale), Colton Sterling Sky Jones and Eric Girtman;

sisters, Bonnie Trent Cohen, Vernell Jones White (Sammie) and Jessie Elizabeth Brock

(Jane Curtis);

mother in law, Raynell Rumfelt, brother in law, Carl Lupo;

niece, Katherine Renee White (Andrew Phifer), Mary Elizabeth Davis (Ben);

nephew, Henry Russell Cohen, V.
